Ingredients:

- 3 small carrots, grated
- 4 large eggs

Prepare the Tofu Mixture: Begin by crumbling the tofu into a large mixing bowl. Add the grated carrots and chopped green onions to the bowl. In a separate bowl, beat the eggs and season with salt and pepper. Pour the beaten eggs over the tofu mixture and stir until all the ingredients are well combined.

Cook the Fuyung Hai: Heat a non-stick pan or a snack maker and add a small amount of margarine. Spoon approximately 2 tablespoons of the tofu mixture into the pan, spreading it evenly. Cook for a few minutes until the bottom is golden brown and firm. Flip carefully and cook the other side until golden brown and cooked through. Repeat with the remaining mixture, adding more margarine as needed.
