Soto Tahu Bening Recipe
Ingredients:
- 2 blocks of white tofu, cut into cubes
- Salt, to taste
- Chicken bouillon powder, to taste
- Granulated sugar, to taste
- Seasoning powder (optional), to taste
- 2 stalks of green onions, chopped
- 1 tomato, diced
- 1 bay leaf
- 2 kaffir lime leaves
- 1 thumb-sized piece of galangal, smashed
- 1 stalk of lemongrass, smashed
- 1 thumb-sized piece of turmeric, smashed
- Water, as needed
For the Spice Paste:
- 2 cloves of garlic
- 4 shallots
- Black pepper, to taste
- Coriander, to taste
For Garnishing:
- Shredded cabbage
- Bean sprouts
- Chopped celery
- Soy sauce
- Lime wedges
- Boiled chili peppers
Instructions:

Prepare the Tofu:
- Heat oil in a frying pan and fry the tofu cubes until golden brown. Remove and set aside.

Cook the Spice Paste:
- In a pan, heat some oil over medium heat. Add the spice paste ingredients (garlic, shallots, black pepper, and coriander) and sauté until fragrant.
- Add the smashed turmeric, galangal, lemongrass, bay leaf, and kaffir lime leaves. Continue to sauté until the spices release their aroma.

Make the Soup Base:
- Pour in enough water to create the soup base. Season with salt, sugar, chicken bouillon powder, and optional seasoning powder. Stir well.
- Bring the mixture to a boil, then reduce heat and simmer for a few minutes.

Combine Ingredients:
- Add the fried tofu, diced tomato, chopped green onions, and celery to the pot. Simmer until the flavors meld together. Adjust the seasoning as needed.

Serve:
- Ladle the soup into bowls and serve hot, accompanied by shredded cabbage, bean sprouts, soy sauce, lime wedges, and boiled chili peppers on the side.
