Martabak Tahu with Spring Roll Wrappers
Ingredients:
- 12 sheets of spring roll wrappers
- 4 pieces of firm tofu
- 2 stalks green onions, finely chopped
- 1 stalk celery, finely chopped
- 3 large eggs
- 1 tablespoon all-purpose flour mixed with 2 tablespoons water (for sealing the wrappers)
- Oil for frying
For the Spice Paste:

- 3 shallots
- 2 cloves garlic
- ½ packet ground black pepper
- Salt, to taste
- Sugar, to taste

Prepare the Filling: Begin by mashing the tofu until it’s smooth. In a bowl, combine the mashed tofu with finely chopped green onions, celery, and the spice paste. Adjust seasoning with salt and sugar according to your taste preferences. Mix well and set aside.

Assemble the Martabak: Place one sheet of spring roll wrapper on a clean surface. Spoon about 1 tablespoon of the tofu mixture onto the center of the wrapper. Fold the sides of the wrapper over the filling to form an envelope shape, ensuring the filling is securely enclosed. Seal the edges of the wrapper with the flour and water mixture.

Fry the Martabak: Heat oil in a frying pan over medium-low heat. Carefully place the prepared martabaks into the hot oil, frying until they are golden brown and crispy. This should take about 3-4 minutes per side. Once cooked, remove them from the oil and drain on paper towels to remove excess oil.
