Tahu Telor with Peanut Sauce

Ingredients:

  • 2 eggs
  • 3 pieces of firm tofu, diced
  • 1 scallion, finely sliced
  • 1 cucumber, diced
  • Bean sprouts, soaked in hot water
  • Cooking oil
  • Salt, to taste

For the Peanut Sauce:

  • 100 grams of peanuts (roasted or toasted, can use walnuts as a substitute)
  • 5 red chili peppers, briefly fried
  • 2 cloves of garlic, briefly fried
  • 1 tablespoon brown sugar
  • Salt, to taste
  • Water, as needed

For Garnishing:

  • Fried shallots
  • Sweet soy sauce (kecap manis)

Instructions:

  1. Prepare the Tofu and Eggs:

    • In a bowl, whisk the eggs with a pinch of salt and the sliced scallion.
    • Gently fold in the diced tofu, mixing until well combined.
    • Heat a generous amount of oil in a skillet over medium heat. Pour in the egg and tofu mixture, cooking until the eggs are fully set and lightly golden. Remove from the pan and set aside.
  2. Make the Peanut Sauce:

    • In a blender, combine the fried chili peppers, garlic, peanuts, brown sugar, and a bit of water. Blend until smooth, adding more water as needed to achieve a creamy consistency.
    • Transfer the blended mixture to a saucepan and bring to a simmer. Adjust the seasoning with salt to taste, stirring occasionally until the sauce is heated through.
  3. Assemble the Dish:

    • On a serving plate, arrange the bean sprouts and diced cucumber on top of the cooked egg and tofu mixture.
    • Drizzle the warm peanut sauce generously over the top.
    • Finish with a sprinkle of fried shallots and a splash of sweet soy sauce.
  4. Serve and Enjoy:
