Crispy Tahu with Salted Egg Sauce

Ingredients:

  • 2-3 blocks of firm tofu
  • 1 packet of instant seasoning flour
  • 2 boiled salted eggs
  • 5 shallots
  • 4 cloves of garlic
  • 3 bird’s eye chilies
  • A handful of green onions
  • A pinch of salt
  • A dash of flavor enhancer (optional)
  • Oil for frying
  • 50 ml water

Instructions:

  1. Prepare the Tofu: Cut the tofu into small cubes. Soak the cubes in a little salt for about 5 minutes to season. Drain the tofu pieces thoroughly. Heat oil in a pan and fry the tofu cubes until golden brown and crispy. Remove and drain excess oil on paper towels.

  2. Prepare the Seasoning: Roughly chop the shallots, garlic, and bird’s eye chilies. Use a mortar and pestle or a food processor to grind these ingredients into a coarse paste. Add a pinch of flavor enhancer if using, and mix well.

  3. Prepare the Salted Egg Sauce: Peel and finely mash the boiled salted eggs. In a separate pan, heat a little oil and sauté the ground seasoning paste until fragrant. Once aromatic, add the mashed salted eggs and stir briefly. Pour in 50 ml of water and cook the mixture until it thickens slightly.

  4. Combine Tofu and Sauce: Add the crispy tofu cubes and chopped green onions to the pan with the salted egg sauce. Gently toss everything together until the tofu is evenly coated with the sauce.

  5. Serve: Turn off the heat and transfer the tofu with salted egg sauce to a serving dish.
