Medium-sized onion 1
Garlic cloves 5
Green chili peppers 5

Salt To taste
Sugar To taste
Black pepper To taste
Butter 2 tbsp
Cooking oil For frying
Water As needed

Instructions

Step Description
1 Prepare the Tuna: Cut the tuna fillet into bite-sized pieces. In a bowl, mix together the all-purpose flour and tapioca flour, adding a pinch of salt. Coat the tuna pieces evenly with the flour mixture.
2 Fry the Tuna: Heat oil in a frying pan and fry the tuna pieces until they are golden and crispy. Once fried, remove them from the oil and set them aside on a paper towel to drain excess oil.
3 Prepare the Vegetables: Roughly chop the onion and garlic cloves. Slice the green chili peppers and bird’s eye chili.
4 Sauté the Aromatics: In a separate pan, heat a little butter and cooking oil. Sauté the chopped onion, garlic, and sliced chilies until they become fragrant. Add the curry leaves and continue to cook for a few minutes.
5 Prepare the Salted Egg Sauce: Using a fork, mash the salted egg yolks until they become smooth. If necessary, add a little water to make it easier to mash.
6 Make the Sauce: Add the mashed salted egg yolks into the sautéed vegetables, stirring well. Pour in a small amount of water and the juice of one lime. Season with salt, sugar, and black pepper to taste. Let the sauce simmer until it thickens slightly. Taste and adjust the seasoning as needed.
7 Combine with Tuna: Once the sauce is ready, add the fried tuna pieces into the pan. Toss the tuna in the sauce and let it cook for a few more minutes until the tuna absorbs the flavors and the sauce coats the fish evenly. If the sauce reduces too quickly, you can add a little more water to keep it saucy.
8 Serve and Enjoy: Once everything is well-coated and flavorful, remove the pan from the heat. Serve the Tuna with Salted Egg Sauce immediately with rice or your preferred side dish. Enjoy!

Tips for Success:

  • When mashing the salted egg yolks, add a tiny bit of water to make it easier to get a smooth consistency.
  • Fry the tuna in batches if necessary to prevent overcrowding the pan, which could affect the crispiness of the fish.
  • Adjust the spiciness by reducing or increasing the number of chilies based on your personal heat preference.

This Tuna with Salted Egg Sauce dish is a fusion of crispy fried tuna and a rich, creamy salted egg yolk sauce infused with aromatic spices and a hint of citrus. The combination of crunchy fish and velvety sauce will tantalize your taste buds, making this a standout dish for any occasion. Serve it with warm rice for a complete meal!
