Instructions:

  1. Prepare the Short Ribs:

    • Make short ribs into short, flat strips.
    • Begin by placing the rib fat-side-up on a cutting board and cut a 1/4″ high layer almost (but not through) the bottom-most section of the rib.
    • Turn the meat over and continue to make 1/4″ layers until the rib is completely layered, creating one long strip.
    • Using the edge of a Chinese knife or another flat surface, pound the meat until it is of an even thickness. Note: Chill the meat well. This cutting method works best with chilled ribs.
  2. Prepare the Marinade (Curry Based Blender Sauce):

    • Blend all liquid ingredients in a blender for about 15 seconds at the “Blend” speed.
    • Grate the fresh ginger root and combine it with the minced garlic.
    • Mince the white (only) portion of the green onions.
    • Add all ingredients to the blender mixture and operate on “low” for about 45 seconds.
  3. Marinate and Grill:

    • Rub the sauce onto the butterflied ribs and refrigerate for 2 or more hours. Note: This sauce works wonders with chicken too.
    • Fire up the grill and place the marinated ribs on it, basting often with the sauce until done, which should take about 30 minutes, depending on the heat of the grill.
