These Rich Chocolate Almond Brownies are an irresistible treat for chocolate lovers! Made with dark chocolate, cocoa powder, and chocolate chips, the addition of whole almonds gives them a satisfying crunch and flavor. Ingredients

  • 250g Dark chocolate, chopped
  • 3/4 cup Nutralite Classic Spread, softened
  • 3/4 cup Brown sugar (Demerara sugar)
  • 1 tsp Vanilla extract
  • 3 Whole eggs (or flaxmeal egg replacer)
  • 1/2 cup All-purpose flour (Maida)
  • 1/2 cup Whole wheat flour
  • 1/4 cup Cocoa powder
  • 1 tsp Baking powder
  • 1 tbsp Brandy (or coffee liquor)
  • 1 cup Chocolate chips (semi-sweet)
  • 1 cup Whole almonds (Badam), blanched & slivered

Instructions

  1. Preheat the Oven:
    Preheat your oven to 180°C (350°F). Grease an 8-inch cake pan with butter and dust it lightly with flour. Set aside.

  2. Melt the Chocolate and Spread:
    In a double boiler, place a large mixing bowl over simmering water. Add the chopped dark chocolate and Nutralite Classic Spread. Stir occasionally until smooth and melted.

  3. Combine Wet Ingredients:
    Once the chocolate mixture is smooth, remove the bowl from the double boiler. Add brown sugar, brandy (or coffee liquor), and vanilla extract. Stir to combine. Add the eggs one at a time, whisking well after each addition (or use flaxmeal egg replacer for a vegan option).

  4. Add Dry Ingredients:
    Next, whisk in the salt, cocoa powder, baking powder, and both flours (all-purpose and whole wheat). Mix until everything is well combined.

  5. Fold in Chocolate Chips and Almonds:
    Gently fold the chocolate chips and slivered almonds into the brownie batter.

  6. Bake the Brownies:
    Pour the batter into the prepared cake pan and smooth the top. Place the pan in the preheated oven and bake for 30 to 40 minutes, or until a tester inserted into the center comes out clean.

  7. Cool and Serve:
    Once baked, remove the brownies from the oven and let them cool completely in the pan. Once cooled, cut into squares and serve.
