Overview:

This Chocolate Almond Cake is a decadent dessert that promises rich flavors in every bite, perfect for indulging in small, delicious slices.

  • Prep Time: 15 minutes
  • Cook Time: 1 hour 15 minutes
  • Total Time: 1 hour 30 minutes
  • Serving: Makes one 23 cm round cake

Ingredients:

  • 2-3 tbsp cocoa powder, plus extra for dusting
  • 140g dark chocolate
  • 1 tsp instant coffee powder
  • 50ml water
  • 5 eggs, separated
  • 340g sugar
  • 125g butter
  • 55g breadcrumbs
  • 225g ground almonds
  • 1/4 tsp cream of tartar
  • Icing sugar, for dusting
  • Slivered almonds, for decoration

Instructions:

  1. Preheat Oven and Prepare Pan:

    • Preheat your oven to 170°C (325°F).
    • Butter a 23 cm round springform cake tin and dust the bottom and sides with sifted cocoa powder, tapping out any excess.
  2. Prepare Chocolate Mixture:

    • In a double boiler over medium heat, combine the dark chocolate, instant coffee powder, and water.
    • Stir gently until the chocolate melts completely, about 5 minutes. Set aside to cool slightly.
  3. Prepare Cake Batter:

    • In a large bowl, beat together the egg yolks, sugar, and butter until fluffy and well combined.
    • Gradually beat in the melted chocolate mixture, followed by the breadcrumbs and ground almonds until smooth.
  4. Whip Egg Whites:

    • In another large bowl, using clean beaters, beat the egg whites with cream of tartar until stiff peaks form.
  5. Combine Batter:

    • Gently fold about 2 tablespoons of the beaten egg whites into the chocolate mixture to lighten it.
    • Carefully fold in the remaining egg whites using a large metal spoon or rubber spatula. Be gentle to maintain the fluffy texture.
  6. Bake:

    • Spoon the batter into the prepared cake tin, smoothing the top evenly.
    • Bake for 1 to 1 1/4 hours, or until the middle of the cake feels firm and springs back lightly when touched.
  7. Cool and Decorate:

    • Remove the cake from the oven and let it cool completely in the pan on a wire rack.
    • In a separate bowl, whip the cream with icing sugar until stiff peaks form.
    • Remove the cake from the pan, dust with sifted icing sugar, and decorate with slivered almonds.
  8. Serve:

    • Slice the Chocolate Almond Cake into small pieces and serve with a dollop of whipped cream on the side.

This Chocolate Almond Cake recipe is perfect for any occasion where you want to treat your guests to a luxurious, chocolatey dessert. Enjoy the rich flavors and smooth texture of this delightful cake!
