Instructions
Grand Marnier Sauce:
- In a microwave-safe bowl, combine butter and sugar. Heat on high for 1 minute until butter is melted.
- Stir in heavy cream, Grand Marnier, and orange zest.
- Heat for an additional 2 minutes, stirring occasionally, then heat for 1 more minute until the sauce is smooth. Set aside.
Chocolate Mousse Filling:
- Melt the bittersweet chocolate using your preferred method.
- In a heatproof bowl, whisk together sugar, egg yolks, and 6 tablespoons of heavy cream.
- Place the bowl over simmering water (double boiler method) and whisk continuously until the mixture thickens.
- Remove from heat and whisk half of the whipped cream into the melted chocolate.
- Gently fold the chocolate mixture into the egg yolk mixture.
- Add the remaining whipped cream and fold gently until combined.
- Chill the chocolate mousse filling in the refrigerator until ready to use.
Crepe Batter:
- In a large bowl, whisk together melted butter and eggs until well combined.
- Gradually whisk in milk, salt, flour, and cocoa powder until smooth.
- Let the batter sit for 20 minutes to allow the flour to hydrate.
- Strain the batter through a fine sieve to remove any lumps.
Cooking the Crepes:
- Heat a crepe pan or non-stick skillet over medium heat and lightly butter the surface.
- Pour a small amount (about 1 to 2 ounces) of crepe batter into the pan, swirling to coat the bottom evenly.
- Cook for about 1-2 minutes until the edges start to lift and the bottom is golden brown.
- Flip the crepe and cook for an additional 1 minute until cooked through.
- Remove the crepe from the pan and repeat with the remaining batter, stacking the cooked crepes on a plate. Let them cool completely.
Assembling the Chocolate Mousse Crepes:
- Place a spoonful of chocolate mousse in the center of each crepe.
- Fold the crepe over the filling to create a half-moon shape or roll it up.
- Arrange the filled crepes on serving plates.
- Spoon the prepared Grand Marnier Sauce generously over the crepes.
- Garnish with fresh orange sections for a pop of color and extra citrus flavor.
