Ingredients

Syrup Filling Cakes
1 1/2 cups granulated sugar 2 cups mascarpone cheese 1 cup all-purpose flour
1 cup strong coffee 4 eggs 1/4 cup cocoa powder
3/4 cup Kahlua 2 tablespoons granulated sugar 1 teaspoon baking powder
2 tablespoons rum 3 egg yolks 1/2 teaspoon baking soda
1/2 cup granulated sugar 1/2 teaspoon salt
1 cup milk chocolate, chopped 2 eggs, separated
1/2 cup canola oil
1/2 cup cold water
1 teaspoon vanilla extract

Instructions

  1. Prepare Syrup:

    • In a saucepan, combine 1 1/2 cups of granulated sugar, coffee, Kahlua, and rum.
    • Bring to a boil, then remove from heat and let it cool. Set aside.
  2. Prepare Filling:

    • Melt the chopped milk chocolate in a bowl over simmering water. Set aside to cool.
    • In a large mixing bowl, beat mascarpone cheese until fluffy.
    • In another bowl over simmering water, whisk together egg yolks and 1/4 cup of granulated sugar until warm and pale.
    • Remove from heat and add to the mascarpone mixture.
    • Mix in the cooled melted chocolate until well combined.
  3. Prepare Cakes:

    • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
    • In a separate bowl, beat egg yolks until pale and fluffy.
    • Gradually add canola oil, cold water, and vanilla extract to the egg yolks, mixing well.
    • Gradually add the sifted dry ingredients to the egg yolk mixture until combined.
    • In another bowl, beat egg whites until soft peaks form, then gradually add remaining 1/2 cup of granulated sugar until stiff peaks form.
    • Gently fold the egg whites into the cake batter until well combined.
    • Divide the batter evenly between the prepared cake pans.
    • Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Remove from oven and cool on a wire rack.
  4. Assemble the Cake:

    • Using a 9-inch springform pan, cut each cake layer into two or four layers, depending on thickness preference.
    • Place one cake layer in the springform pan. Brush lightly with the prepared syrup mixture.
    • Spread a layer of the chocolate mascarpone filling over the cake layer.
    • Continue layering with the remaining cake layers, brushing each layer with syrup and spreading with filling.
    • Top with the final cake layer and brush with syrup.
    • If there is any remaining filling, spread it over the top layer of the cake.
    • Cover the cake and refrigerate for at least three hours before serving.
  5. Serve:

    • Before serving, optionally top with fresh whipped cream, cocoa powder, and grated milk chocolate for an extra indulgent touch.
