- 1/2 cup rum
- 4 pieces glace ginger (cut into small pieces)
- 60g dark chocolate (extra for coating)
- 125g Copha (vegetable shortening)

- Begin by roughly chopping the dark chocolate and halving the marshmallows. Set aside for later use.

- In a small saucepan (with a base about 15cm in diameter), combine the cream and sugar. Stir over moderate heat until the sugar is completely dissolved.

- Increase the heat and bring the mixture to a rapid boil, stirring briskly and constantly for about 4 minutes. The mixture should start to change color and catch on the base of the saucepan.

- Remove the saucepan from heat and immediately stir in the chopped dark chocolate and marshmallows. Add the rum to the mixture and continue stirring until the chocolate and marshmallows are completely melted. Allow the mixture to cool to room temperature.
