Instructions
- Preheat your oven to 350°F (175°C).
- In a medium saucepan, combine heavy cream, vanilla extract, and Splenda. Heat over medium-low until it reaches a bare simmer.
- While the cream mixture heats, separate 3 of the eggs; reserve the whites for another use if desired.
- In a mixing bowl, whisk together the remaining whole eggs and yolks until slightly thickened and lightened in color.
- Gradually drizzle about a quarter of the hot cream mixture into the egg mixture while whisking continuously to temper the eggs.
- Pour the tempered egg mixture back into the saucepan with the remaining cream mixture, whisking to combine.
- Place a fine mesh strainer over a glass or stainless steel bowl with a spout. Carefully pour the custard mixture through the strainer to catch any curdled bits.
- Arrange custard cups in a roasting pan, then fill the pan with boiling water until it reaches just below the custard level.
- Bake on the middle rack of the oven for approximately 40 minutes. The custard should slightly wobble when the pan is gently moved, or a knife inserted should come out clean.
- Using tongs, carefully remove the cups from the pan and transfer to a towel-lined sheet pan. Allow them to cool, then cover and chill before serving.
