Ingredients

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, combine heavy cream, vanilla extract, and Splenda. Heat over medium-low until it reaches a bare simmer.
  3. While the cream mixture heats, separate 3 of the eggs; reserve the whites for another use if desired.
  4. In a mixing bowl, whisk together the remaining whole eggs and yolks until slightly thickened and lightened in color.
  5. Gradually drizzle about a quarter of the hot cream mixture into the egg mixture while whisking continuously to temper the eggs.
  6. Pour the tempered egg mixture back into the saucepan with the remaining cream mixture, whisking to combine.
  7. Place a fine mesh strainer over a glass or stainless steel bowl with a spout. Carefully pour the custard mixture through the strainer to catch any curdled bits.
  8. Arrange custard cups in a roasting pan, then fill the pan with boiling water until it reaches just below the custard level.
