Instructions

For the perfect Ricotta and Cocoa Cake, start by cracking the eggs into a large mixing bowl. Begin whisking them using electric beaters at a medium speed until they become fluffy and light. Gradually add the sugar, a pinch of salt, and the zest of one lemon to enhance the cake’s flavor. Continue whisking until the mixture is smooth and well-combined.

Next, carefully add the ricotta cheese. Ensure that the ricotta is well-drained before incorporating it into the egg mixture. Using a spatula, gently fold in the flour and unsweetened cocoa powder, making sure the ingredients are fully blended but not overworked.
