Instructions:

Start by preparing all of your ingredients and ensuring they are at room temperature. Begin by separating the eggs, using 120g of egg whites and 80g of yolks. Carefully beat the egg whites until stiff peaks form and set them aside.

Next, sift the dry ingredients in a bowl: all-purpose flour, potato starch, and baking powder. Mix the sifted ingredients gently with a spoon to ensure they are evenly combined.

In another bowl, soften the butter to room temperature and add the sugar. Using an electric mixer, beat the butter and sugar together until the mixture becomes smooth and creamy. Gradually add the egg yolks, one at a time, mixing well after each addition. Once all yolks are incorporated, alternate adding the wet and dry ingredients to the bowl. Start with a little bit of almond milk, followed by a portion of the sifted flour mixture. Continue alternating between the almond milk and the dry ingredients until everything is added to the bowl and the batter is smooth and well combined.

Once the wet and dry ingredients are well mixed, stop the mixer. Break the amaretti biscuits into coarse crumbs by hand and add them to the bowl. Incorporate the whipped egg whites into the batter. The first portion of the egg whites can be mixed gently to help loosen the batter, while the remaining egg whites should be folded in carefully with upward strokes, ensuring that the mixture stays light and airy.

The batter is now ready. Transfer it into a prepared cake pan and level the surface with a spoon to ensure an even top. Bake the cake at 180°C (350°F) for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, allow the cake to cool slightly before gently removing it from the pan. For the finishing touch, decorate the top of the cake with whole amaretti biscuits, placing them around the perimeter of the cake to create a beautiful presentation.
