Instructions:
Start by preparing all of your ingredients and ensuring they are at room temperature. Begin by separating the eggs, using 120g of egg whites and 80g of yolks. Carefully beat the egg whites until stiff peaks form and set them aside.
Next, sift the dry ingredients in a bowl: all-purpose flour, potato starch, and baking powder. Mix the sifted ingredients gently with a spoon to ensure they are evenly combined.
In another bowl, soften the butter to room temperature and add the sugar. Using an electric mixer, beat the butter and sugar together until the mixture becomes smooth and creamy. Gradually add the egg yolks, one at a time, mixing well after each addition. Once all yolks are incorporated, alternate adding the wet and dry ingredients to the bowl. Start with a little bit of almond milk, followed by a portion of the sifted flour mixture. Continue alternating between the almond milk and the dry ingredients until everything is added to the bowl and the batter is smooth and well combined.
