Ingredients

Firm tofu 2 large pieces, diced
Bird’s eye chilies 5 pieces
Red bell pepper 2, sliced diagonally
Garlic 2 cloves, minced
Shallots 6, sliced
Candlenuts 3 pieces
Tamarind 1 tsp
Kecap ABC (sweet soy sauce) 1 tsp
Galangal To taste, smashed
Lemongrass 1 stalk, bruised
Sugar To taste
Salt To taste
Mushroom seasoning To taste

Instructions

  1. Prepare the Spice Paste: In a mortar and pestle, grind all the ingredients except the red bell pepper into a fine paste. Lightly smash the galangal to release its flavor.

  2. Sauté the Spices: In a pan, heat oil over medium heat and sauté the ground spice mixture until fragrant. Add the sliced red bell pepper, galangal, and a few bay leaves, cooking until slightly wilted.

  3. Add Water: Pour in approximately half a glass of water and allow it to simmer until it reduces slightly.

  4. Season the Sauce: Repeat the water addition with the same amount. Stir in the tamarind, salt, mushroom seasoning, and sugar, adjusting to your taste.

  5. Incorporate the Tofu: Once the sauce reaches a boil, gently add the fried tofu pieces, allowing them to absorb the flavors. Stir occasionally to ensure even coating.

  6. Finish with Sweet Soy Sauce: Drizzle the kecap ABC over the tofu, letting the mixture simmer until the sauce thickens and becomes syrupy.
