Instructions
To prepare the Plum Clafoutis, begin by slicing the shelled almonds into thin slivers. Spread them evenly in a baking dish lined with parchment paper.
Next, focus on the plums: rinse them under cold water, then cut them in half, removing the pits with a small knife. Slice the plums into even wedges and set them aside.
Now, make the batter: in a large mixing bowl, crack the three eggs and add the sugar. Using a hand whisk, blend the eggs and sugar until smooth. Add a pinch of salt, then sift in the flour. Scrape the seeds from the vanilla bean and stir them into the mixture. Gradually pour in the milk, ensuring it’s at room temperature, stirring continuously to create a smooth batter. Finally, pour in the brandy to give the batter a lovely aroma.
Once the batter is ready, butter a 28 cm diameter baking dish. Arrange the plum slices in concentric circles at the bottom of the dish, using about 16-17 slices to create a beautiful pattern. Scatter the toasted almonds over the plums.
Pour the batter over the plums and almonds, ensuring the fruit is completely covered. The Plum Clafoutis is now ready to be baked.
Place the dish in the oven and bake at 180°C (350°F) for about 40-45 minutes, or until the top is golden and set. Once baked, remove it from the oven and let it cool slightly.
