Vegetable Omelette (Telor Dadar Sayuran)

Ingredients:

  • 2 large eggs
  • 1 small carrot
  • 8 green beans
  • 2 small scallions (or 1 large)
  • 1 stalk celery
  • ½ small onion
  • 4 bird’s eye chilies
  • Salt and pepper, to taste
  • Optional: chicken stock powder
  • Cooking oil, as needed

Steps:

  1. Preparation: Begin by washing all the vegetables thoroughly. Slice the carrot, green beans, scallions, and celery into thin pieces. Thin slicing ensures that the vegetables cook quickly and evenly, preventing them from becoming too chewy. Coarsely grate the carrot for a softer texture.

  2. Mix Ingredients: In a mixing bowl, crack the eggs and add a pinch of salt, pepper, and chicken stock powder if using. Whisk until well combined. Add the chopped vegetables and mix thoroughly. The mixture might seem like there isn’t enough egg at first, but don’t worry. Stir continuously for about 4-5 minutes until the vegetables start to soften and the mixture comes together.

  3. Cook the Omelette: Heat a non-stick skillet or frying pan over medium-low heat and add a small amount of cooking oil. Pour the egg and vegetable mixture into the pan. Cook over low heat to ensure the omelette cooks evenly without burning. Avoid flipping the omelette until the underside is fully set to prevent it from breaking apart.
