Ingredients:
- 1 liter Milk
- 1/2 cup Condensed milk (full fat)
- 1 1/2 cups Rice
- 1 1/2 cups Sugar
- 1/4 teaspoon Cardamom powder
- 1 teaspoon All-purpose flour (maida)
- A pinch of Baking powder
- Oil or Ghee for frying (as needed)
- 1/4 cup Water
Preparation Time: 15 minutes
Cooking Time: 35 minutes
Total Time: 50 minutes
Servings: 8-10
Instructions:
-
Boil the Milk: Begin by boiling the milk in a large pan. Once it comes to a boil, reduce the heat to low and allow it to simmer.
-
Cook the Rice: Add the rice to the milk and cook on low heat, stirring occasionally, until the rice is soft and the mixture thickens.
-
Prepare the Syrup: Add the sugar and water to the mixture and continue to cook on low heat. Stir occasionally, allowing the syrup to form. This should take around 10-15 minutes.
-
Cool the Mixture: Once the syrup is ready, remove the pan from heat and allow the rice mixture to cool slightly. Then, transfer the mixture to a mixer or mash it by hand to create a smooth texture.
-
Make the Laddus: Add the flour and baking powder to the rice mixture and mix well. Shape the mixture into small round laddus.
-
Fry the Laddus: Heat oil or ghee in a frying pan on low heat. Fry the laddus in the hot oil until they turn golden brown, ensuring they are cooked through.
-
Soak in Syrup: Once the laddus are fried, place them in the syrup. Sprinkle cardamom powder over the laddus and mix gently.
-
Rest and Serve: Allow the laddus to soak in the syrup for about an hour, letting the syrup absorb fully into the rice laddus. Serve Dudhauri Jharkhand as a delectable dessert after a hearty meal.
Enjoy this sweet, comforting treat, perfect for festive celebrations and family gatherings!
