Instructions:

  1. Prepare the cake batter: Start by ensuring all the ingredients are at room temperature. Cut the butter into small pieces and place it in a large mixing bowl. Add the eggs, sugar, and lemon zest to the bowl. Use an electric mixer or a whisk to beat the mixture until it becomes smooth and creamy, forming a light, fluffy batter.

  2. Mix the dry ingredients: In a separate bowl, sift together the all-purpose flour, almond flour, baking powder, and a pinch of salt. Gradually add this dry mixture to the wet batter, mixing until everything is well combined.

  3. Add the milk: Pour in the milk and continue to mix until the batter reaches a smooth, homogenous texture. You should have a creamy and slightly thick batter at this point.

  4. Prepare the baking pan: Take a 28 cm diameter cake pan and grease it with butter. Line the bottom with parchment paper to ensure the cake doesnโ€™t stick to the sides. Pour the batter into the pan, spreading it evenly with a spatula to smooth the surface.
