Easy Hainanese Chicken and Rice in a Rice Cooker

Hainanese Chicken and Rice (Magicom Method) ๐Ÿš๐Ÿ—

Ingredients:

For Boiling the Hainanese Chicken:

  • 1 whole free-range chicken
  • 1 tablespoon salt
  • 5 cloves garlic, crushed
  • 1 thumb-sized piece of ginger, sliced and lightly crushed
  • A handful of spring onions
  • 1 small onion, sliced
  • 700 ml water for boiling the chicken

For the Hainanese Rice:

  • 3 cups white rice
  • 3 1/2 cups chicken broth (from boiling the chicken)
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 pandan leaf, tied in a knot

For Stir-Frying the Hainanese Chicken:

  • 3 cloves garlic, chopped
  • 1/2 small onion, thinly sliced
  • 3 cm ginger, thinly sliced
  • 3 tablespoons sesame oil
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 70 ml water

Instructions:

Preparing the Hainanese Chicken:

  1. Thoroughly clean the chicken and rub it all over with salt. Place the garlic, ginger, and spring onions inside the cavity of the chicken.
  2. Bring the water to a boil in a pot, then add the chicken. Cook until the chicken is fully cooked and tender.
  3. Remove the chicken and transfer it to a bowl of ice water. Let it cool for 10-15 minutes. Once cooled, cut the chicken into pieces according to your preference and set aside.

Cooking the Hainanese Rice:

  1. Rinse the rice under cold water until the water runs clear. Place the rice in a rice cooker.
  2. Add the chicken broth, sesame oil, soy sauce, and the knotted pandan leaf to the rice cooker. Close the lid and press the “cook” button.
  3. When the rice cooker switches from “cook” to “warm,” open the lid, fluff the rice with a fork, and close the lid again. Allow the rice to steam for an additional 10-15 minutes to ensure even cooking.

Stir-Frying the Hainanese Chicken:

  1. Heat the sesame oil in a pan over medium heat. Add the garlic, onion, and ginger. Sautรฉ until fragrant and golden.
  2. Add the oyster sauce, soy sauce, and water. Adjust the seasoning to taste.
  3. Add the pre-cut chicken pieces and stir to coat with the sauce. Cook for a few more minutes until the chicken is well mixed with the sauce.

Serving:

  • Serve the Hainanese chicken over the fragrant rice. Enjoy the dish hot, garnished with additional spring onions if desired.
