Shrimp Pempek with Egg Filling

Ingredients:

  • 250 grams fresh shrimp
  • 250 grams tapioca flour
  • 3 eggs
  • Salt to taste
  • Chicken bouillon powder (Royco) to taste
  • Water, as needed
  • Cooking oil for boiling

Instructions:

  1. Prepare the Shrimp:
    Begin by cleaning the shrimp thoroughly. Remove the heads and shells, and make sure to devein them. Rinse the shrimp well under running water.

  2. Blend the Shrimp:
    Place the cleaned shrimp into a blender and blend until the mixture is smooth. If necessary, blend again to ensure a fine consistency.

  3. Mix Ingredients:
    In a mixing bowl, combine the blended shrimp with eggs, chicken bouillon powder, and salt. Stir the mixture using a rice paddle or a spoon to avoid cooking the mixture with your hands and to ensure it remains smooth.

  4. Add Tapioca Flour:
    Gradually add the tapioca flour to the shrimp mixture, stirring continuously with the rice paddle. Once the dough starts to come together, you can use your hands to knead it until it becomes a smooth, pliable dough.

  5. Prepare the Boiling Water:
    Fill a pot with water and add a little cooking oil and salt. Bring it to a boil.

  6. Shape the Pempek:
    Take a small portion of the dough and shape it into a ball with your hands. Use your thumb to create a well in the center of each ball. Lightly beat the remaining eggs with a pinch of salt, then pour a small amount into the well of each dough ball. Be careful not to overfill. Seal the dough by pinching the edges together.

  7. Cook the Pempek:
    Gently place the shaped pempek into the boiling water. Cook until the pempek float to the surface, indicating that they are fully cooked through.

  8. Serve:
    Remove the pempek from the water and drain them. Serve hot with cuko pempek (a tangy, spicy vinegar sauce) or kuah model (a savory broth).
