Ingredients

  • 1 cup wild rice
  • 1 packet (approx. 1.75 ounces) seasoning mix for rice
  • 1 3/4 cups water
  • 1/2 cup butter, divided (1/4 cup melted and 1/4 cup cut into small pieces)
  • Cut-up vegetables (e.g., carrots, celery, onions)
  • 4 pieces of chicken (thighs, breasts, or a combination; with or without skin)

Instructions

  1. Prepare the Rice Layer:

    • Begin by preheating your oven to 375°F (190°C).
    • In a large casserole dish, pour the wild rice and evenly sprinkle the seasoning packet over the top.
  2. Add Liquid and Vegetables:

    • Carefully pour the water over the seasoned rice.
    • Add the cut-up vegetables of your choice to the dish. This could be a medley of carrots, celery, onions, or any vegetables you prefer.
  3. Prepare the Chicken:

    • Take the butter and rub it over the skin side of the chicken pieces. If using skinless chicken, you can skip this step.
    • Place the chicken pieces, skin side up (or bone side up if using boneless), on top of the rice mixture.
  4. Add Butter and Bake:
