I love Hispanic food, and plantains are one of my favorite ingredients. Here’s a unique soup for all you adventurous chefs! Make sure to use green plantains, as they add a distinct flavor and texture to this dish. Avoid letting your plantains turn yellow-black, as they will become sweet instead of savory.
Ingredients:

Instructions:

Heat Oil: In a large saucepan, heat the extra virgin olive oil over medium heat.

SautΓ© Aromatics: Add the chopped onions, carrots, celery, and garlic cloves to the saucepan. Cook them uncovered for 3-4 minutes, or until the onions are soft but not browned.

Bring to Boil: Pour in 4 cups of chicken broth or stock and bring the mixture to a boil over high heat.

Add Ingredients: Peel and slice the green plantains and add them to the boiling broth along with most of the chopped cilantro (reserve some for garnish), cumin, and a bay leaf. Season with salt and pepper to taste.

Simmer: Reduce the heat to medium-low and let the soup simmer, uncovered, for 40-50 minutes or until the plantains are very tender.

Remove Bay Leaf: Once the soup is cooked, discard the bay leaf from the pot.

Blend Soup: Transfer half of the soup to a blender and puree it until smooth.

Adjust Consistency: Return the pureed soup to the saucepan. If the soup is too thick, add a little more chicken broth or stock until you reach your desired consistency.

Season to Taste: Taste the soup and adjust the seasoning with more salt or cumin if desired.
