Instructions:
-
Prepare Ingredients:
- Begin by cutting the beef steak into cubes, approximately 3cm in size.
- Peel and dice the small potatoes and yellow onions.
- Finely chop the garlic cloves and green onions.
- Trim the lemongrass stalks and slice them thinly.
- Gather all the spices: cardamom pods, whole cloves, ground nutmeg, black peppercorns, cumin seeds, and ground chili.
-
Cook Beef:
- Heat oil in a large saucepan over high heat.
- Add the cubed beef steak and cook, stirring occasionally, until browned on all sides.
- Once browned, remove the beef from the pan and set it aside on a plate lined with absorbent paper to drain excess oil.
-
Cook Vegetables:
- In the same saucepan, add the diced potatoes and onions.
- Stir and cook over high heat until they are lightly browned.
-
Prepare Musaman Curry Paste:
- Combine the chopped yellow onions, garlic cloves, sliced lemongrass, ground chili, cumin seeds, cardamom pods, ground nutmeg, whole cloves, and black peppercorns in a small bowl.
- Sprinkle this mixture onto an oven tray and bake in a moderate oven for 10 minutes until fragrant. Allow it to cool.
-
Make Curry:
- To the cooked vegetables in the saucepan, add the musaman curry paste.
- Stir well and cook for about 1 minute to release the flavors.
-
Add Coconut Cream and Beef:
- Pour in the coconut cream and stir until well combined with the curry paste.
- Return the cooked beef to the saucepan.
-
Combine Tamarind and Sugar:
- In a separate bowl, mix the tamarind paste with hot water until dissolved.
- Add this tamarind mixture to the saucepan along with brown sugar.
-
Simmer Curry:
- Bring the curry to a boil, then reduce the heat to a simmer.
- Let it cook uncovered for about 45 minutes, or until the beef is tender and the sauce has thickened to your desired consistency.
-
Blend Shrimp Paste:
- In a blender or food processor, combine the shrimp paste with water.
- Blend until smooth.
-
Finish Curry:
- Gradually add the blended shrimp paste mixture to the curry, stirring well to incorporate.
- Continue to simmer for a few more minutes to allow the flavors to meld together.
-
Serve:
- Once the curry reaches your desired consistency and flavor, remove it from the heat.
- Serve the Musaman Beef Curry hot, garnished with chopped green onions, alongside steamed rice or naan bread.
-
