Ayam Mercon Setan: Spicy Indonesian Chicken

Ingredients:

  • 1/2 chicken
  • 5 shallots
  • 3 garlic cloves
  • 10 bird’s eye chilies
  • 5 red chilies
  • Salt, to taste
  • Sugar, to taste
  • Black pepper, to taste
  • Chicken bouillon powder, to taste
  • 1 tablespoon oyster sauce
  • Cooking oil
  • 1/2 cup water

Instructions:

  1. Begin by boiling the chicken until fully cooked. Once done, drain and set aside.

  2. In a food processor or mortar and pestle, grind the shallots, garlic, bird’s eye chilies, and red chilies into a smooth paste.

  3. Heat a generous amount of cooking oil in a pan over medium heat. Add the ground spice paste and sauté until the mixture is fragrant and cooked through.

  4. Season the mixture with salt, sugar, black pepper, and chicken bouillon powder. Stir well to combine all the flavors.

  5. Add the boiled chicken pieces into the pan. Stir the chicken into the spice mixture, ensuring it is well coated.

  6. Pour in the oyster sauce and water, stirring to combine. Continue cooking until the liquid has reduced and the chicken is evenly coated with the spicy sauce.

  7. Once the sauce has thickened and the chicken is fully absorbed with the flavors, your Ayam Mercon Setan is ready to be served.
