Ingredients:
- 1/2 chicken
- 5 shallots
- 3 garlic cloves
- 10 bird’s eye chilies
- 5 red chilies
- Salt, to taste
- Sugar, to taste
- Black pepper, to taste
- Chicken bouillon powder, to taste
- 1 tablespoon oyster sauce
- Cooking oil
- 1/2 cup water

Begin by boiling the chicken until fully cooked. Once done, drain and set aside.

In a food processor or mortar and pestle, grind the shallots, garlic, bird’s eye chilies, and red chilies into a smooth paste.
