Ingredients

  • 1 package lime Jell-O gelatin
  • 1 package raspberry Jell-O gelatin
  • 1 cup boiling water (for each Jell-O flavor)
  • 3 cups miniature marshmallows
  • 1 cup cold water (3/4 cup for lime Jell-O, 3/4 cup for raspberry Jell-O)
  • 1 1/2 cups cream cheese
  • 6 tablespoons mayonnaise
  • 1 can (20 oz) crushed pineapple, drained

Instructions

  1. Prepare Lime Jell-O: Dissolve lime Jell-O in 1 cup boiling water. Stir in 3/4 cup cold water. Pour into a 13x9x2-inch pan. Chill until set, but not firm.

  2. Prepare Raspberry Jell-O: Dissolve raspberry Jell-O in 1 cup boiling water. Stir in 3/4 cup cold water. Set aside at room temperature until slightly thickened.

  3. Prepare Lemon Mixture: Stir marshmallows into the lime Jell-O. Set aside.

  4. Cream Cheese Addition: Add cream cheese to the marshmallow-lime Jell-O mixture. Beat until well blended. Chill until slightly thickened.

  5. Finalize Lemon Layer: Blend in mayonnaise, whipped cream, and crushed pineapple into the slightly thickened lime Jell-O mixture. Chill until very thickened. Gently spoon over the lime Jell-O layer. Chill until set, but not firm.

  6. Complete Raspberry Layer: Meanwhile, chill the raspberry Jell-O mixture until thickened. Pour over the lemon layer. Chill until firm.

  7. Optional Note: For deeper green and red layers, use 6-oz packages of lime and raspberry Jell-O, respectively. Use 2 cups boiling water and 1 1/2 cups cold water for each large package.

Serving

  • Serve on large red lettuce leaves, each topped with a dab of mayonnaise and a mint leaf for a festive touch.
