Description: This vibrant and delicious Northwest Jello Salad brings a burst of color and flavor to any occasion. Originally crafted by my mom for the Fourth of July, it features layers of red, white, and blue that make it a stunning centerpiece for holiday tables. Each layer is made with different flavors and textures, creating a festive, multi-colored treat that everyone loves. The key to its perfect presentation is to cool each layer thoroughly before adding the next to avoid melting. Though it started as a holiday tradition, it has become a cherished part of many other celebrations as well!

- Add 1 cup of frozen raspberries to the mixture and stir well.
- Pour the mixture into a cold gelatin mold or bundt pan, ensuring an even layer.
- Refrigerate until firm, about 1 to 2 hours.

- In a medium saucepan over medium heat, combine 1 cup of half-and-half cream and 1/2 cup of granulated sugar. Stir until the sugar is completely dissolved and the cream is heated, but not boiling. Remove from heat.

-
Assemble Layer 2:
- Once the first layer is set, carefully pour the cooled cream mixture over it. Ensure the cream mixture is thoroughly cooled to avoid melting the first layer.
- Return the mold to the refrigerator and allow this layer to set completely, about 1 to 2 hours.
-
Prepare Layer 3:
- Drain 1 cup of blueberries, reserving 3/4 cup of their juice. Set aside.
- In a medium bowl, dissolve 1 package of raspberry gelatin powder in 1 cup of hot water. Stir until fully dissolved.
- Stir in the blueberries and the reserved 3/4 cup of blueberry juice.
- Let the mixture cool thoroughly at room temperature.
-
Assemble Layer 3:
- Once the second layer is firm, gently pour the cooled blueberry mixture over it.
- Return the mold to the refrigerator and chill until all layers are set and firm, which may take an additional 2 to 3 hours.
-
Serve:
- Once the Northwest Jello Salad is fully set, remove it from the mold by carefully running a knife around the edges and inverting it onto a serving plate.
