Ingredients

  • 1 block of Chinese tofu
  • 1 large egg
  • 10-20 boiled quail eggs
  • 5 tablespoons all-purpose flour
  • 1 packet seasoning mix (such as Masako)
  • Salt and pepper, to taste
  • 1 tablespoon sugar
  • 2-3 green onions, finely sliced
  • Breadcrumbs, for coating

For the Spice Paste:

  • 3 cloves garlic
  • 2 shallots
  • A small pinch of coriander seeds

Instructions

  1. Prepare the Tofu: Begin by thoroughly washing the Chinese tofu. Once cleaned, mash the tofu until it reaches a smooth consistency.

  2. Make the Spice Paste: In a blender or food processor, combine the garlic, shallots, and coriander seeds. Blend until you achieve a fine paste.

  3. Mix Ingredients: In a large bowl, add the mashed tofu, spice paste, seasoning mix, salt, pepper, and sugar. Mix well until all ingredients are evenly incorporated.

  4. Incorporate Flour and Egg: Gradually add the all-purpose flour to the tofu mixture, stirring continuously. Once the flour is fully incorporated, add the large egg and sliced green onions. Mix until the mixture is smooth and well combined.

  5. Shape the Balls: Take a small amount of the tofu mixture and flatten it in your hand. Place a quail egg in the center and carefully fold the tofu around the egg, forming a smooth ball. Repeat this process until all the tofu mixture and quail eggs are used.

  6. Coat and Fry: Roll each tofu ball in breadcrumbs to coat thoroughly. Heat oil in a frying pan over medium heat. Once the oil is hot, carefully add the tofu balls to the pan. Fry until they are golden brown and crispy on all sides, about 4-5 minutes.

  7. Serve Hot: Remove the tofu balls from the pan and drain on paper towels. Serve hot with your favorite dipping sauces, such as ketchup, soy sauce, or mayonnaise.
