Instructions:

1 In a heavy saucepan (off heat), whisk together eggs, yolks, sugar, and salt until well combined.
2 Gradually stir in the milk, adding it 1/2 cup at a time, and blend well after each addition.
3 Heat the mixture slowly over the lowest possible heat, stirring constantly, until the custard reaches 160 degrees Fahrenheit on an instant-read thermometer. This should take about 25-30 minutes. The custard will thicken and coat the back of a spoon. 25-30 minutes
4 Once thickened, pour the custard through a fine-mesh sieve into a large bowl to remove any lumps.
5 Stir in the dark rum, spiced rum, vanilla extract, and freshly grated nutmeg until well combined.
6 Cover the bowl with plastic wrap and refrigerate the eggnog until it is well chilled, preferably for several hours or overnight.
7 Just before serving, whip the heavy cream in a medium bowl until it reaches very soft peaks. Gently fold the whipped cream into the chilled custard mixture until fully incorporated.
8 Serve the Holiday Eggnog in chilled cups, and garnish each serving with a sprinkle of freshly grated nutmeg for an extra festive touch.
