Ingredients
- 1/4 Chicken (cut into small pieces)
For the Spice Paste:
- 7 Shallots
- 4 Cloves of Garlic
- 1 Large Tomato
- 15 Bird’s Eye Chilies
- 5 Red Curly Chilies
- 5 Candlenuts
- 1 tbsp Black Pepper
- 2 Thumb-sized pieces of Ginger
- 1 Index-finger length of Turmeric
Additional Spices:
- 5 Kaffir Lime Leaves (torn)
- 1 Bay Leaf
- 2 Stalks of Lemongrass (bruised)
Seasoning:
- Brown Sugar
- White Sugar
- Salt
- Chicken Stock Powder
- 1 Glass of Water

Prepare the Spice Paste:
- Blend together the shallots, garlic, tomato, bird’s eye chilies, red curly chilies, candlenuts, black pepper, ginger, and turmeric until you achieve a smooth paste.

- Heat a bit of oil in a pan over medium heat. Add the spice paste and sauté until it’s fragrant and partially cooked. Be careful, as the spices might make you sneeze! 😅
