Spicy Chicken Feet (Ceker Ayam Lepas Pedas)

Ingredients:

  • 1 1/2 pounds chicken feet, cleaned and nails removed (boil with bay leaves and garlic for approximately 45 minutes)
  • For the Spice Paste:
    • 6 large green chilies
    • 20 red bird’s eye chilies
    • 1/2-inch piece of galangal
    • 4 shallots
    • 2 garlic cloves
    • Sugar, salt, and seasoning to taste
  • Water, as needed

Instructions:

  1. Prepare the Spice Paste: Begin by boiling the green chilies, red bird’s eye chilies, galangal, shallots, and garlic until softened. Drain and blend the mixture into a smooth paste.

  2. Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant and the oil starts to separate.

  3. Season the Paste: Add a little water to the pan and season with sugar, salt, and additional seasoning if desired. Stir well and adjust the seasoning to taste.

  4. Combine with Chicken Feet: Add the boiled chicken feet to the pan. Mix well to ensure the chicken feet are thoroughly coated with the spice paste. Cook for another 5 minutes, allowing the flavors to meld and the chicken feet to absorb the spices.

  5. Serve: Once the chicken feet have absorbed the flavors and are well coated with the spicy paste, they are ready to be served. Enjoy this flavorful and spicy dish as a unique and delicious treat!

This recipe is perfect for those who enjoy a spicy kick with their meals and are looking to try something a bit different. The combination of chilies and aromatic spices creates a tantalizing flavor that’s sure to impress.
