Ingredients:

  • 1 poblano chili
  • 6 Anaheim chilies
  • 3 cloves garlic
  • 1/4 cup olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon chili powder
  • Hot pepper sauce, to taste
  • Salt and pepper, to taste
  • 4 T-bone steaks

Instructions:

Step Description
1 Roast the poblano and Anaheim chilies over a gas flame or under the broiler until blackened on all sides.
2 Place the roasted chilies in a paper bag and let them stand until cool.
3 Peel, stem, and seed the cooled chilies, then finely chop them and set aside.
4 Preheat your oven to 375°F (190°C).
5 Toss the garlic with 2 tablespoons of olive oil in a heavy small baking pan. Roast the garlic until soft, about 20 minutes, then allow it to cool.
6 Peel the roasted garlic, reserving the oil in the pan, and mash it in a small bowl.
7 Add the unsalted butter, chili powder, and hot pepper sauce to the mashed garlic, and blend well to create the chili butter.
8 Mix in the chopped roasted chilies and the oil reserved from the garlic.
9 Heat the remaining 1 tablespoon of olive oil in a heavy large skillet over high heat.
10 Season the T-bone steaks with salt and pepper, then add them to the skillet.
11 Cook the steaks to your desired doneness, about 3 minutes per side for rare.
12 Once cooked, arrange the T-bone steaks on a platter.
13 Top the steaks generously with the prepared chili butter.
