Ingredients:
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp salt
- 1 1/2 tsp ground cumin
- 1/2 tsp cayenne
- 1/2 tsp ground cloves
- 1/2 tsp ground mace
- 1/2 tsp black pepper
- 1/2 tsp white pepper
- 2 onions, diced
- 2 celery stalks, diced
- 2 bay leaves
- 2 tbsp fresh ginger, minced
- 2 portabella mushrooms, chopped
- 1/4 cup rice wine
- 2 tbsp tamari
- 2 tbsp raisins
- 1 cup converted white rice
- 4 cups vegetable stock
Instructions:

Prepare Seasoning Mix:
- Combine garlic powder, onion powder, salt, ground cumin, cayenne, ground cloves, ground mace, black pepper, and white pepper in a small bowl. Set aside.

Sauté Aromatics:
- Heat oil in a heavy 4-quart pot over high heat until it begins to smoke.
- Stir in onions, celery, bay leaves, ginger, mushroom, and 2 tablespoons of the seasoning mix.
- Cook, stirring frequently, until the mixture turns a dark metallic color and sticks to the bottom of the pot, about 6 to 8 minutes.

- Add rice wine and tamari to the pot, scraping the bottom to loosen the browned bits.

- Add raisins and rice to the pot, continuing to cook until all liquid is absorbed and rice starts to stick to the bottom, about 5 to 6 minutes.
