Ayam Geprek Hot: Crispy Fried Chicken with Spicy Chili Sauce
Discover the irresistible taste of Ayam Geprek Hot, a tantalizing Indonesian dish featuring crispy fried chicken topped with a fiery chili sauce. Perfect for those who crave a deliciously spicy kick!

Ingredients:
For the Chicken:
- 1/2 kg chicken, pre-marinated (ayam ungkep)
For the Dry Flour Coating:
- 6 tablespoons all-purpose flour (Segitiga brand)
- 2 tablespoons tapioca flour
- 2 tablespoons cornstarch
- 1/2 tablespoon baking powder
- 1 teaspoon white pepper
- 1 tablespoon black pepper (optional, for extra heat)
- 1/2 tablespoon chicken bouillon powder
- A pinch of salt
For the Wet Flour Batter:
- Ice-cold water, as needed
For the Chili Sauce:
- 3 cloves garlic
- 9 red bird’s eye chilies (cabe rawit merah)
- 2 tablespoons vegetable oil
- Salt, to taste
Steps:
-
Prepare the Flour Coating:
- In a large bowl, combine all the dry flour coating ingredients: all-purpose flour, tapioca flour, cornstarch, baking powder, white pepper, black pepper, chicken bouillon powder, and a pinch of salt. Mix well.
- Divide the mixture into two separate bowls. One will be used for the dry coating, and the other for the wet batter.
-
Make the Wet Batter:
- Add ice-cold water to one bowl of the flour mixture to create a batter. The consistency should be thick enough to coat the chicken but not too runny. Adjust with more flour or water as needed.
-
Coat the Chicken:
- Dredge the chicken pieces in the dry flour coating, ensuring they are fully covered.
- Dip the coated chicken into the wet batter, allowing any excess to drip off.
- Return the chicken to the dry flour mixture, pressing and patting the coating to adhere well. For extra crispiness, gently press and squeeze the coating onto the chicken.
-
Fry the Chicken:
- Heat vegetable oil in a deep pan over medium heat. Ensure there is enough oil to fully submerge the chicken for deep frying.
- Carefully add the coated chicken to the hot oil. Fry without flipping initially until the chicken turns golden brown. Flip the chicken and cook until fully crispy and cooked through.
- Remove the fried chicken and drain on paper towels.
-
Prepare the Chili Sauce:
- Lightly fry the garlic cloves in a small pan with vegetable oil for about 10 seconds—just until fragrant, not fully cooked.
- Blend the fried garlic and red bird’s eye chilies into a smooth paste. Add salt to taste.
- Pour hot oil over the chili paste, stirring to combine.
-
Assemble the Dish:
- Place the fried chicken on a serving plate. Use a pestle or spoon to gently press down each piece of chicken to flatten slightly.
- Spoon the spicy chili sauce over the top of the chicken.
-
Serve and Enjoy:
- Garnish with additional chili sauce if desired for extra heat. Serve hot and enjoy the crispy, spicy goodness of Ayam Geprek Hot!
