Spicy Egg with Shrimp Paste (Telur Masak Petis Pedas)
Ingredients:
- 6 chicken eggs, boiled and lightly fried to form a thin skin
- 2 tablespoons shrimp paste (petis)
- 200 ml water
- Salt and sugar to taste
Ground Spice Mix:
- 2 large red chilies
- 7 red bird’s eye chilies (cabe rawit)
- 6 shallots
- 2 cloves garlic
- 2 cm turmeric
- 4 roasted candlenuts (kemiri)
Instructions:
- Begin by heating a pan over medium heat and add a small amount of oil. Once hot, sauté the ground spice mix until it becomes fragrant, filling your kitchen with a delightful aroma.
- Add the shrimp paste to the pan, stirring well to ensure it combines evenly with the spices.
- Pour in the water and bring the mixture to a boil. Allow it to simmer for a few minutes to let the flavors meld together.
- Gently add the boiled and fried eggs into the pan. Stir carefully to coat the eggs with the sauce, being mindful not to break them. Let the mixture cook until it thickens to your desired consistency.
- Season the dish with salt and sugar, adjusting to taste. For an extra kick, you may add whole bird’s eye chilies according to your preference.
- Once the sauce has thickened and the flavors have fully developed, remove the dish from the heat.
- Serve the Spicy Egg with Shrimp Paste hot, garnished with additional chilies if desired.
