Instructions

Step 1: Prepare the Fava Beans

Start by washing the fava beans thoroughly. Once cleaned, carefully remove the beans from their pods. Next, peel off the thin, waxy skin that covers the individual beans. This step is essential for achieving a smooth puree later on.

Step 2: Cook the Fava Beans

Bring a large pot of water to a boil and cook the fava beans for about 5–7 minutes, or until they’re tender. Once cooked, drain the beans, reserving a small amount of the cooking water.

Step 3: Make the Fava Bean Puree

Transfer the cooked fava beans into a bowl. Add a ladle of the reserved cooking water to the beans, and use a fork or a hand blender to mash the beans until you have a smooth, creamy consistency. If the mixture seems too thick, add more of the cooking water a little at a time until the desired texture is reached. The final result should be a rich, dense puree.

Step 4: Season the Puree

Season the fava bean puree with a pinch of fine salt and a generous drizzle of extra virgin olive oil. Add freshly ground black pepper to taste. Stir well and set aside to let the flavors meld.

Step 5: Prepare the Garnishes

While the fava bean mixture is resting, cube the pecorino cheese into small pieces. Also, dice the salame into small cubes, ready for topping the pastries.
