3 In a small bowl, mix together the lemon juice, Worcestershire sauce, and Tabasco sauce. Pour this mixture over the browned pork slices in the pan.
4 In a separate small saucepan, heat the brandy until warm. Carefully ignite the brandy with a match, being cautious of any flammable materials nearby. Once ignited, quickly pour the flaming brandy over the pork in the pan. Allow the flames to die down.
5 Cover the pan and simmer the pork for 5 minutes over low heat.
6 While the pork is simmering, prepare the pears by slicing them thinly. Arrange the pear slices around the pork in the pan and baste them with the sauce. Cover the pan again and continue to cook for an additional 5 minutes.
