Ingredients:
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk
- 1 can salmon, cleaned and de-boned
- 1/4 cup bread crumbs
- 1 egg, separated into yolk and white
- 1 small onion, finely chopped
- 1/2 teaspoon paprika
- 1 tablespoon lemon juice or vinegar
- Pinch of celery salt
Instructions:

- In a saucepan, melt the butter over medium heat.
- Stir in the flour, forming a roux. Cook for 1-2 minutes until lightly golden.

- Mix in the bread crumbs, chopped onion, egg yolk, lemon juice or vinegar, celery salt, and paprika.

- Gently fold in the cleaned and de-boned salmon until evenly distributed.

- In a separate bowl, beat the egg white until stiff peaks form.

- Carefully fold the beaten egg white into the salmon mixture.
- Pour the mixture into a buttered 1-quart baking dish, ensuring it’s evenly distributed.
- Preheat the oven to 350°F (175°C).
- Bake the souffle in the preheated oven for 45 minutes, or until puffed up and golden brown on top.
