Description: This recipe is a family favorite taken from my mother’s personal handwritten cookbook that she began writing around 1915, while still a high school student. More flavorful and less egg than most salmon souffle recipes. Enjoy!!!

Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk
  • 1 can salmon, cleaned and de-boned
  • 1/4 cup bread crumbs
  • 1 egg, separated into yolk and white
  • 1 small onion, finely chopped
  • 1/2 teaspoon paprika
  • 1 tablespoon lemon juice or vinegar
  • Pinch of celery salt

Instructions:

  1. Prepare the Roux:

    • In a separate bowl, beat the egg white until stiff peaks form.
  5. Combine and Bake:

    • Carefully fold the beaten egg white into the salmon mixture.
    • Pour the mixture into a buttered 1-quart baking dish, ensuring it’s evenly distributed.
    • Preheat the oven to 350°F (175°C).
    • Bake the souffle in the preheated oven for 45 minutes, or until puffed up and golden brown on top.
