To begin preparing this flavorful Shrimp Curry, youโ€™ll first need to clean the shrimp in order to make a savory seafood broth. Start by removing the heads and shells of the shrimp. Place the shrimp into a bowl, add one tablespoon of vegetable oil, and toss gently to coat. Cover the bowl with plastic wrap and let the shrimp marinate in the refrigerator while you continue with the preparation.

Next, clean the vegetables. Rinse the onion and carrot thoroughly, then chop them coarsely into large chunks. Do the same with the celery stalk, leaving the leaves intact for added flavor. Peel the fresh ginger and cut it into medium-sized pieces. Set all the vegetables aside.
