Instructions:

To make these soft, pillowy oatmeal focaccine, follow these simple steps for a delicious homemade treat:

  1. Prepare the Work Surface:
    Begin by setting up a wooden work surface (madia) and lay a damp cloth underneath to keep it steady while you work. This will help with the kneading process.

  2. Mix the Dry Ingredients:
    In a large bowl, combine the all-purpose flour, whole wheat flour, and dry yeast. Mix them thoroughly with a wooden spoon until the ingredients are evenly distributed.

  3. Add Water and Knead:
    Gradually add the water, stirring continuously. As the dough begins to come together and absorbs the water, continue mixing for a few minutes until it becomes a more consistent mass. The dough should start wrapping around your spoon, showing that it’s incorporating well.

  4. Incorporate Salt:
    Add the fine salt into the dough. Knead until the salt is fully incorporated and the dough feels smoother.

  5. First Resting and Fold:
    Once you’ve completed the kneading, let the dough rest for about 10-15 minutes. After this, lightly oil your hands and perform a series of 4 strengthening folds to reinforce the dough’s structure. This will help with the texture and rise later.

  6. Repeat the Fold Process:
    After the first resting, cover the dough with a cloth. Allow it to rest for another 10-15 minutes. Perform the same 4-fold technique again, and you will notice that the dough will respond more easily, indicating it’s developing well.

    Cover the dough again and allow it to rest for another 10-15 minutes. After this, repeat the folding process and fold the rolled oats into the dough. Use a dough scraper (tarocco) to help incorporate the oats evenly into the dough.

  8. Rest and Relax:
    Once the oats are fully incorporated, oil a bowl and place the dough inside. Cover it with a cloth and let it rest. After a while, you should see the dough has nearly doubled in size. Perform another set of 4 folds with a scraper.

  9. Cut the Dough into Portions:
    Allow the dough to rest for about 10 minutes. Then, using a dough cutter, divide the dough into 12 equal pieces (about 70g each). Shape each piece into a round ball, performing 4 reinforcing folds on each to help them rise nicely.

  10. Shape and Rest the Focaccine:
    Place the formed dough balls onto two baking trays lined with parchment paper and lightly dusted with flour. Make sure thereโ€™s enough space between each ball for expansion. Cover them with a cloth and let them rest for another 30 minutes.

  11. Prepare the Brine and Shape:
    While the dough rests, prepare the brine by mixing water and olive oil in a tall glass. Once the resting period is over, dip your fingers into the brine and gently flatten each ball of dough to form a focaccina. This brine helps give the focaccine a soft, slightly crispy surface.
