Garlic Herb Gratinated Clams with Grana Padano

Gratinated Clams (Fasolari Gratinati)

Ingredients:

Clams (Fasolari) 12
Homemade bread (preferably rustic) 100g
Fresh parsley 1 bunch
Freshly ground black pepper to taste
Grana Padano DOP cheese 50g
Garlic 1 clove
Extra virgin olive oil 2 tablespoons

Instructions:

  1. Preparing the Clams:
    Start by opening the fresh clams. As you do so, make sure to collect their water to use later. Carefully detach the clams from their shells, keeping the shells aside. Use a meat mallet or a knife to gently pound and loosen the clams. On a cutting board, chop the clams coarsely and place them in a bowl. Donโ€™t forget to strain the clam water to remove any sand or impurities.

  2. Making the Filling:
    Remove the crust from the rustic bread and cut the soft part into chunks. Place the chunks into a food processor and pulse until you get small breadcrumbs. Add the finely chopped parsley, Grana Padano cheese, and the garlic (crushed or minced). Blend until you achieve a smooth, creamy mixture.

  3. Preparing the Shells:
    Take a piece of aluminum foil and cut it into strips. Shape these strips into small rings and place them under each clam shell. This will help the shells stay upright during baking. Arrange the shells on a baking tray lined with parchment paper for easy cleanup.

  4. Stuffing the Clams:
    Spoon a tablespoon of the chopped clams into each shell. Then, top them generously with the breadcrumb mixture, pressing it down lightly to ensure it stays in place.

  5. Baking:
    Preheat your oven to 200ยฐC (about 392ยฐF). Once ready, place the clams in the oven and bake for about 25 minutes. After this time, increase the temperature to its highest setting and switch on the grill function. Allow the clams to grill for an additional 5 minutes, until a golden, crispy crust forms on top.

  6. Serving:
    Once golden and crispy, remove the gratinated clams from the oven. Serve them immediately while still hot for a delicious and savory appetizer.
