Steamed Gurame with Garlic and Scallions


Ingredients:

  • 1 kg gurame fish (or another suitable freshwater fish)
  • 2 oz finely minced garlic (adjust to taste)
  • 1/2 tsp finely minced shallots
  • 1-2 stalks scallions, sliced
  • 1 thumb-sized piece of ginger, julienned
  • Sesame oil, to taste
  • 1 tomato, sliced
  • 1/2 onion (optional)
  • Salt, to taste
  • Sugar, to taste
  • Seasoning (e.g., chicken bouillon or similar), to taste
  • Water, as needed

Instructions:

  1. Prepare the Fish:

    • Clean the gurame fish and lightly rub it with salt and lime juice. If you prefer, you can skip the lime juice, but it helps in adding a refreshing flavor.
    • Steam or cook the fish until it is half-done. Be cautious not to overcook, as this may cause the fish to become dry and tough. The aim is to have the fish tender and just shy of being fully cooked.
  2. Prepare the Garlic Mixture:

    • In a pan, heat a small amount of oil over medium heat. Add the finely minced garlic and sauté until it becomes fragrant but not burnt.
    • Optionally, add a small amount of sesame oil for an extra depth of flavor. Continue to sauté the garlic, and if using, add the minced shallots and chopped onion until aromatic.
  3. Create the Sauce:

    • Add a little water to the pan with the garlic mixture and season with salt, sugar, and seasoning (such as chicken bouillon) to taste. Allow this to simmer until the flavors meld and the sauce thickens slightly.
    • Add the tomato slices and scallions to the pan. Heat briefly until the vegetables are just tender but still vibrant.
  4. Combine and Finish Cooking:

    • Gently place the partially cooked fish into the pan with the garlic sauce. If the fish was previously steamed to half-cooked, steam it again with the sauce until fully cooked through, but avoid overcooking.
  5. Serve:

    • Once the fish is fully cooked, transfer it to a serving dish. Pour the garlic sauce and vegetables over the fish, ensuring it is well-coated.
  6. Enjoy:

    • Serve immediately, savoring the fragrant, tender fish with the aromatic garlic sauce and vegetables.

This dish pairs wonderfully with steamed rice or as part of a larger meal. The combination of garlic, scallions, and ginger creates a rich and flavorful sauce that enhances the delicate taste of the gurame fish.
