Ingredient | Quantity |
---|---|
Water | 180g |
All-purpose flour (Tipo 0) | 400g |
Plain yogurt | 80g |
Garlic (for dough) | 1 clove |
Salt | 10g |
Fresh brewer’s yeast | 1g |
Extra virgin olive oil | 40g |
Garlic (for seasoning) | 1 clove |
Fresh coriander (optional) | 1 sprig |
Instructions
Step 1: Prepare the Dough
- Begin by placing the flour into the bowl of a stand mixer equipped with a dough hook.
- Add the finely chopped garlic and fresh yeast to the flour.
- Gradually pour in the water and mix until the dough begins to come together.
- Continue mixing until the dough has absorbed the water completely, becoming soft and homogeneous.
- Add the salt to the mixture and continue kneading until the dough becomes elastic and smooth.
Step 2: Let the Dough Rise
- Lightly grease a bowl with olive oil.
- Transfer the dough into the bowl, using oiled hands to handle it. Cover the bowl with a lid or plastic wrap.
- Allow the dough to rise at room temperature for about 1 to 1.5 hours or until it has doubled in size.
Step 3: Shape and Prepare the Naan
- After the dough has risen, divide it into small balls, roughly the size of a golf ball.
- Lightly flour the surface and shape each portion of dough into a small round or oval flatbread.
- Cover the shaped dough balls with a clean kitchen towel to prevent them from drying out.
Step 4: Cooking the Naan
- Heat a non-stick griddle or pan over medium heat. Lightly oil the surface with a drizzle of olive oil.
- Place one naan on the griddle. Cook until you see bubbles forming on the surface (about 2 minutes). Flip it over to cook the other side for another 2 minutes or until it becomes slightly golden.
- Once cooked, stack the naan on top of each other to keep them warm.
Step 5: Prepare the Garlic Oil Topping
- While the naan is cooking, finely chop the garlic for the topping.
- In a small bowl, combine the chopped garlic with olive oil.
- Stir well to mix the flavors.
Step 6: Final Touch
- After the naan has been cooked, brush the garlic oil mixture generously over the surface of each naan.
- Optionally, garnish with finely chopped fresh coriander for added flavor.
