Garlic Naan (Naan all’aglio)

Ingredients

Plain yogurt 80g
Garlic (for dough) 1 clove

Fresh brewer’s yeast 1g

Instructions

Step 1: Prepare the Dough

  1. Begin by placing the flour into the bowl of a stand mixer equipped with a dough hook.
  2. Add the finely chopped garlic and fresh yeast to the flour.
  3. Gradually pour in the water and mix until the dough begins to come together.
  4. Continue mixing until the dough has absorbed the water completely, becoming soft and homogeneous.
  5. Add the salt to the mixture and continue kneading until the dough becomes elastic and smooth.

Step 2: Let the Dough Rise

  1. Lightly grease a bowl with olive oil.
  2. Transfer the dough into the bowl, using oiled hands to handle it. Cover the bowl with a lid or plastic wrap.
  3. Allow the dough to rise at room temperature for about 1 to 1.5 hours or until it has doubled in size.

Step 3: Shape and Prepare the Naan

  1. After the dough has risen, divide it into small balls, roughly the size of a golf ball.
  2. Lightly flour the surface and shape each portion of dough into a small round or oval flatbread.
  3. Cover the shaped dough balls with a clean kitchen towel to prevent them from drying out.

Step 4: Cooking the Naan

  1. Heat a non-stick griddle or pan over medium heat. Lightly oil the surface with a drizzle of olive oil.
  2. Place one naan on the griddle. Cook until you see bubbles forming on the surface (about 2 minutes). Flip it over to cook the other side for another 2 minutes or until it becomes slightly golden.
  3. Once cooked, stack the naan on top of each other to keep them warm.

Step 5: Prepare the Garlic Oil Topping

  1. While the naan is cooking, finely chop the garlic for the topping.
  2. In a small bowl, combine the chopped garlic with olive oil.
  3. Stir well to mix the flavors.

Step 6: Final Touch

  1. After the naan has been cooked, brush the garlic oil mixture generously over the surface of each naan.
  2. Optionally, garnish with finely chopped fresh coriander for added flavor.
