Lahsuni Dal Tadka – Garlic Dal Tadka Recipe
Lahsuni Dal Tadka is a flavorful North Indian dish made with a combination of lentils and garlic. The addition of pumpkin enhances the taste, making this dish both hearty and delicious. Easy to prepare, it’s perfect for your everyday meal.

Ingredients:
- 1/4 cup Tuvar dal (Arhar dal)
- 1/4 cup Green moong dal
- 1/4 cup Masoor dal
- 1-inch Ginger, grated
- 2 Green chillies, sliced thinly
- 1-inch Cinnamon stick
- 1 Bay leaf
- 2 Tomatoes, finely chopped
- 250 grams Pumpkin, peeled and sliced
- Salt, to taste
- 1 tsp Turmeric powder
- 1 tsp Ghee (clarified butter)
- 1 tsp Cumin seeds
- 3 cloves Garlic, chopped
- 2 Dried red chillies
Prep Time: 10 minutes
Cook Time: 45 minutes

Instructions:

Cook the Dal:
- In a pressure cooker, add the tuvar dal, green moong dal, masoor dal, grated ginger, turmeric powder, salt, chopped tomatoes, green chillies, pumpkin slices, cinnamon stick, bay leaf, and 2-1/2 cups of water.
- Mix well, close the cooker, and cook for 2 whistles on medium heat.
- After 2 whistles, reduce the flame and cook for an additional 3 to 4 minutes.
- Turn off the gas and let the pressure release naturally.
- Once the pressure is released, open the cooker and give the dal a good mix. Adjust salt to taste.

Prepare the Tempering (Tadka):
- Heat ghee in a small pan.
- Add cumin seeds, garlic, and dried red chillies.
- Sauté for about 15 seconds until the garlic becomes golden and the cumin seeds crackle.
- Turn off the heat and pour this tempering over the cooked dal.

Serve:
- Mix the dal and tempering well.
- Serve hot with Mushroom Capsicum Sabzi, Palak Raita, and Phulkas for a complete meal.
