Instructions

To begin, prepare the vegetables for the stir fry. Clean and wash the button mushrooms, then quarter them into even-sized pieces. Next, wash the bok choy thoroughly and dry it with a kitchen towel. Once dry, slice the stems and leaves of the bok choy into broad 2-inch pieces.

  1. Heat the pan: Heat 1 teaspoon of sesame oil in a large pan or wok over medium-high heat. Once the oil is hot, add the grated ginger, finely chopped garlic, and sliced red chilies.
  2. Sauté the aromatics: Stir-fry these ingredients for about 2 minutes until the aroma is released. Be sure to stir constantly to prevent the garlic from burning.
  3. Cook the mushrooms: Add the quartered mushrooms to the pan and stir-fry them until they begin to soften and cook through.
  4. Add the bok choy: Toss in the bok choy pieces, soy sauce, white vinegar, and paprika powder. Stir-fry everything together for another 3–5 minutes, or until the mushrooms are cooked al dente, and the bok choy has softened but retains some crispness.
  5. Finish with honey: Once the mushrooms are perfectly cooked, remove the pan from the heat. Drizzle the honey over the stir-fry and toss gently to combine all the flavors.
  6. Garnish and serve: Transfer the stir fry to a serving plate and sprinkle sesame seeds on top for a crunchy finish.
