Goan Style Khatkhatem, also known as a mixed vegetable gravy, is a vibrant and wholesome dish traditionally prepared in Hindu households in Goa. It features a variety of seasonal vegetables like pumpkin, raw banana, raw jackfruit, yam, and radish, all simmered in a rich coconut curry. The addition of moong dal enhances the texture and gives the dish a creamy consistency. Flavored with turmeric powder and chili, Khatkhatem is a delightful, mildly spiced, and hearty stew that’s both nutritious and comforting. The dish pairs beautifully with pav or tawa parathas, making it a perfect option for a satisfying and healthy lunch.

Ingredients:

Kaddu (Parangikai / Pumpkin) 1 cup, skin peeled and chopped
Raw Banana 1, skin peeled and chopped
Green Peas (Matar) 1/2 cup
Yellow Moong Dal (Split) 1/4 cup
Salt To taste
Tamarind Water 1 cup
To Grind
Fresh Coconut 1 cup
Turmeric Powder (Haldi) 1 teaspoon
Dry Red Chilli 3

Instructions:

  1. Cook the Dal and Vegetables:
    Begin by pressure cooking the yellow moong dal along with all the vegetables, except the green peas, and add enough water to cover them. Cook for 1 whistle on medium heat. After the whistle, allow the pressure to release naturally for the vegetables and dal to cook properly.

  2. Grind the Coconut Paste:
    While the dal and vegetables are cooking, grind the fresh coconut, turmeric powder, and dry red chilies into a smooth paste. Set this mixture aside.

  3. Combine Ingredients:
    Once the pressure is released, open the pressure cooker and place it back on the heat. Add the prepared coconut paste into the cooker along with 1/2 cup of water. Stir well to combine the paste with the cooked vegetables and dal.

  4. Season and Simmer:
    Add salt to taste and stir in the green peas and tamarind water. Allow the mixture to simmer for about 5 minutes or until the gravy thickens slightly and the flavors meld together.

  5. Final Touch:
    Taste the gravy and adjust the salt if necessary. Once the desired consistency is achieved, remove from heat.

  6. Serve:
    Serve the Goan Style Khatkhatem hot, accompanied by soft pav (Goan bread) or tawa parathas for a satisfying and wholesome meal.
