Cooking Time:

Instructions:
-
Cook the Dal and Vegetables:
Begin by pressure cooking the yellow moong dal along with all the vegetables, except the green peas, and add enough water to cover them. Cook for 1 whistle on medium heat. After the whistle, allow the pressure to release naturally for the vegetables and dal to cook properly. -
Grind the Coconut Paste:
While the dal and vegetables are cooking, grind the fresh coconut, turmeric powder, and dry red chilies into a smooth paste. Set this mixture aside. -
Combine Ingredients:
Once the pressure is released, open the pressure cooker and place it back on the heat. Add the prepared coconut paste into the cooker along with 1/2 cup of water. Stir well to combine the paste with the cooked vegetables and dal. -
Season and Simmer:
Add salt to taste and stir in the green peas and tamarind water. Allow the mixture to simmer for about 5 minutes or until the gravy thickens slightly and the flavors meld together. -
Final Touch:
Taste the gravy and adjust the salt if necessary. Once the desired consistency is achieved, remove from heat. -
Serve:
Serve the Goan Style Khatkhatem hot, accompanied by soft pav (Goan bread) or tawa parathas for a satisfying and wholesome meal.
Enjoy this comforting and flavorful Goan-style vegetable stew for a healthy, vibrant lunch!
Tips:
- You can adjust the consistency of the gravy by adding more or less water, depending on your preference.
- The dish is naturally mild, so feel free to adjust the heat level by adding more dry red chilies or green chilies if you like it spicier.
- This dish is a great way to incorporate a variety of seasonal vegetables into your diet, making it not only delicious but also highly nutritious.
