Description:
Put these babies on your next Mexican menu. You won’t be disappointed. Cook time does not include browning the beef.
Ingredients:
- 1 lb lean ground beef
- 1/2 onion, chopped
- 1/4 cup chile salsa
- 3 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp ground coriander
- Salt and pepper, to taste
Instructions:

Prepare the Beef Filling:
- Crumble and sauté beef and onion in a skillet until the beef is cooked and the onion is soft.
- Drain any excess fat.
- Stir in red chile salsa, chili powder, cumin, garlic powder, coriander, salt, and pepper. Set aside.

Prepare the Dough:
- Place thawed patty shell dough on a floured board and roll it out into one piece to about 1/16 inch thickness.
- Cut the dough into rounds using a 3-inch round cookie cutter or a large drinking glass.

Assemble the Empanadas:
- Put 2 teaspoons of filling on each dough circle.
- Fold each circle over to create a half-circle shape.
- Moisten the edges with water and press them together with a fork to seal the empanadas.

Bake the Empanadas:
- Preheat the oven to 400°F (200°C).
- Place the assembled empanadas slightly apart on an ungreased cookie sheet.
- Prick the tops of the empanadas with a fork.
- Bake for 15 to 20 minutes or until golden brown.
- Serve hot.

Optional: Freezing and Reheating:
- These empanadas can be wrapped carefully after baking and frozen.
- To reheat, bake the frozen empanadas uncovered at 400°F (200°C) for 5 to 8 minutes until heated through.
