Buttermilk Biscuits Recipe

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Total Time: 30 minutes
Yield: 1 dozen biscuits

Ingredients:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup butter, cold and cut into cubes
  • 3/4 – 1 cup buttermilk (adjust as needed)
  • 2 tablespoons butter, melted (for brushing)
  • Additional 2 tablespoons butter (for skillet)

Instructions:

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Place 2 tablespoons of butter in a 10 1/2 inch cast iron skillet and place it in the oven to melt the butter while you prepare the dough.

  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

  3. Cut in Butter: Add the cold cubed butter to the flour mixture. Use a pastry blender or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.

  4. Add Buttermilk: Pour in 3/4 cup of buttermilk to start with. Stir the mixture gently with a fork or wooden spoon until the dry ingredients are just moistened and the dough starts to come together. Add more buttermilk if needed, a tablespoon at a time, until the dough holds together but is not too wet.

  5. Shape the Dough: Turn the dough out onto a lightly floured surface. Pat the dough into a rectangle or circle about 1/2 inch thick.

  6. Cut the Biscuits: Use a 2 1/2 inch round cutter (or the rim of a glass) to cut out biscuits from the dough. Press straight down and lift the cutter directly up without twisting to ensure the biscuits rise evenly.

  7. Prepare Skillet: Carefully remove the hot skillet with melted butter from the oven. Swirl the skillet to coat the bottom evenly with butter.

  8. Arrange Biscuits: Place the cut biscuits into the skillet, arranging them so they touch slightly. This helps them rise higher.

  9. Bake: Place the skillet in the preheated oven and bake the biscuits at 350°F (175°C) for about 20 minutes, or until they are golden brown on top and cooked through. The internal temperature should reach about 200°F (93°C) when measured with a thermometer.

  10. Brush with Butter: Once baked, remove the skillet from the oven and immediately brush the hot biscuits with the remaining 2 tablespoons of melted butter for a beautiful finish.

  11. Serve: Serve the buttermilk biscuits warm. They are delicious on their own, with butter, or with your favorite jam or gravy.

Tips for Perfect Buttermilk Biscuits:

  • Cold Ingredients: Keep the butter and buttermilk cold before mixing. Cold butter helps create flaky layers in the biscuits.
  • Don’t Overmix: Stir the dough just until the ingredients are combined. Overmixing can result in tough biscuits.
  • Skillet Baking: Baking the biscuits in a preheated skillet with melted butter gives them a crisp bottom and helps them rise beautifully.
  • Handling the Dough: Handle the dough gently to keep the biscuits tender. Pat the dough rather than kneading it.

Enjoy these buttermilk biscuits as a delightful addition to breakfast, brunch, or any meal where a warm, flaky biscuit is appreciated. Their buttery, tender texture and golden crust make them a classic favorite that’s perfect for sharing with loved ones!
