Ingredients:

Quantity Ingredient
8 Potatoes
6 Celeriac
Lemon juice
3 Gruyere cheese
4 Olive oil
1 Parsley
1 Thyme
1 Cayenne pepper
1 Salt
Fresh ground pepper
2 Eggs

Instructions:

  1. Boil the Potatoes and Celeriac:

    • Put the potatoes and celeriac in a pan of boiling salted water along with a splash of lemon juice to prevent discoloration.
    • Cook for approximately 8 minutes until they are tender but still firm.
  2. Drain and Cool:

    • Drain the potatoes and celeriac, then allow them to cool for about 10 minutes.
    • Peel the celeriac once it’s cool enough to handle.
  3. Grate and Mix:

    • Grate the cooled celeriac and potatoes into a large mixing bowl.
    • Add grated Gruyere cheese, olive oil, chopped parsley, thyme leaves, a pinch of cayenne pepper, and season with salt and freshly ground pepper to taste.
    • Mix everything together until well combined.
  4. Preheat the Oven:

    • Preheat your oven to a fairly hot temperature of 200°C (400°F).
  5. Prepare the Rosti Mixture:

    • Spoon the prepared celeriac and potato mixture into two buttered ovenproof dishes.
    • Create a well in the center of each dish to accommodate the eggs.
  6. Bake the Rosti:

    • Place the dishes in the preheated oven and bake for about 20 minutes or until the rosti is golden brown and crispy on the edges.
  7. Add Eggs:

    • Once the rosti is nicely browned, carefully crack one egg into the well of each dish.
    • Return the dishes to the oven and continue baking for an additional 5-10 minutes, or until the egg whites are set and the yolks are still slightly runny.
  8. Serve:

    • Remove the celeriac and potato rosti brunch from the oven.
    • Serve immediately, garnished with a sprinkle of fresh herbs if desired.

Enjoy your delightful Celeriac and Potato Rosti Brunch, a satisfying dish bursting with flavors that will surely make your taste buds dance with joy! 🍳🥔🌿
